As promised, the pecan pie recipe!
Ren's Momma's Pecan Pie
1/2 cup butter
1 cup sugar
3 eggs, slightly beaten
3/4 cup dark corn syrup (Ren's note: it can actually be any kind of corn syrup, and the color of the syrup only slightly effects the taste. I just use whatever I have available. It all tastes good anyway.)
1/4 teaspoon salt
1 teaspoon vanilla
1 cup chopped pecans, shelled and cleaned
9-inch unbaked pastry shell (chill thoroughly!)
Cream butter. Add the sugar and cream until light and fluffy. Add eggs, corn syrup, salt, vanilla, and pecans, and blend well. Pour into chilled pastry shell. Bake on lower shelf at 350-degrees Fahrenheit for 40-45 minutes.
Ren's note: For chocolate pecan pie (i.e. an even higher chance of becoming diabetic), add 1/2 cup chocolate chips to filling, then continue to follow recipe as directed.
See? Easy as... Well, pie!

This one, however, sounded really easy and I thought this would be the first recipe I could actually try out. ^_~ Well sadly, there are still a couple of things I don't know.
Questions: what are "9-inch unbaked pastry shell" and are pecans some specific sort of nuts or is it possible to use other sorts of nuts?..

Date: 2007-03-01 08:58 pm (UTC)Pecans are a specific nut. Um. You could probably use some other kind of nut, but I've never tried. Walnut might work. I don't know what nuts are readily available in your area, else I'd try to be more specific. ^^
Let me know if you have more questions! I'll do what I can to help out. ^_^

Date: 2007-03-01 09:29 pm (UTC)I believe I could find the recipe of making pastry shells on google- it would save you the trouble to search for the recipe.
Seeing the pictures of pecans, I'm not sure if there are such nuts in my country. Hard to tell, because they look quite similar to walnuts (maybe I just didn't see the difference between them 'till now?..).
Thank you for the recipe, I'll definitely try it out, too. ^^
